Crepes!

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

1.   1.5 cups of flour
2.   1 Tbsp Sugar
3.   .5 tsp baking powder
4.   .5 tsp salt
5.   2 cups of milk
6.   2 Tbsp melted margarine
7.   .5 tsp vanilla
8.   2 eggs

Directions

Mix flour, sugar, baking powerder and salt in big bowl. Stir in remaining ingredients. Beat with hand beater until smooth. Heat a skillet to medium heat. (Lightly butter if not non-stick)
Pour 1/4 cup of batter for one crepe, immediately rotate skillet for a thin cover. Flip when bottom is light brown. When both sides are cooked, stack on plate (wax paper between them so they don’t stick together)
Fill with ANYTHING you want! I love butter and powdered sugar. In France, they made chocolate nutella and banana crepes. Fan favorite is fruit jams, add powdered sugar for extra sweetness. Ham and chese crepes are even created and delicious. Ice cream? Whip cream? Possibilities are endless!

Red Pepper Boats

Prep Time: 5 minutes
Cook Time: 1 minute
Total Time: 6 minutes

Ingredients

      1.   One red pepper (or any color really..)
      2.   1 cup Shredded cheddar cheese
      3.   Dashes of Salt
      4.   Try any crunchy filler! (Bacon, popcorn, potato chips, broccoli, something crispy)

Directions

      Cut the pepper in half. Cut each half into 4-6 boat shaped pieces. Arrange on microwave safe plate.
      Add the cheese and salt into pepper boats. Add any other chosen crunchy ingredients.
      Microwave for 45 seconds. Enjoy!

Ice Cream Sandwich

Prep Time: 30 seconds
Cook Time: 3 minutes
Total Time: 4 minutes

Ingredients:

      1.   Two Eggo Waffles (whatever kind really.. chocolate chip rules)
      2.   ~1 cup Ice Cream (vanilla, again whatev)

Directions:

        Toast the waffles. Spread a thin (1-2cm) thick layer of ice cream on one waffle. Make it into a sandwich. Eat :)
        Tip: Eat it fast and hold it horizontally. It melts..

Rice Krispie Treats

I know they have this recipe on every pack of marshmallows AND Rice Krispies box.. but I have some extra thoughts that will make them turn out MUCH better. Trust me.

Prep Time: 2 minutes
Cook Time: 7 minutes
Total Time: 10 minutes

Ingredients:

1.  6 cups of Rice Krispies (Or if you’re feeling adventurous, Cocoa Pebbles or probably any cereal would work)
2.  One large bag of marshmallows
3.  Half a stick of butter (4 Tbsp)
4.  A small amount (~1 tsp) of vanilla extract
5.  Something else fun to add. I like rainbow jimmies. Food coloring, sprinkles, chocolate chips, and many other things would also work. Or don’t add anything!

Directions:

Get a big big bowl. Make sure it’s microwave safe. (if you don’t have one big enough to mix all of the ingredients you have before you, I apologize. You will have more clean up. Do one of the following things: Follow directions to heat on a stove found on box or do the same but use a smaller microwave safe bowl to only heat marshmallows and butter, then transfer over to a bigger bowl to mix.)
Add butter to the bowl and microwave on high for one minute. Add all of the marshmallows and microwave for 50 seconds. Mix. Microwave for an additional 40 seconds. Add Vanilla extract and mix until smooth. Add Rice Krispies and other fun-ness you choose (Jimmies, etc).
Lay out a 12″ piece of wax paper. Dump mixture onto wax paper. Wet hands with water. Press mixture into any shape you want (square, heart, whatever!) Let them cool. All done

Nacho Deluxe

Prep time: 2 minutes
Cook time: 45 seconds
Total time: 3 minutes

Ingredients:

    1.  Tortilla Chips
    2.  1 – 1.5 cups of Shredded Cheese (Cheddar, Mexican, whatever)
    3.  Toppings!!!
               – Salsa spots
               – Hot peppers
               – Olives?
               – Sour Cream
               – More chips
               – Popcorn? (but don’t let them get soggy…)
               – Sliced red peppers
               – Mac and cheese?

Directions.

      Spread out chips into a thin layer on a microwave safe plate. sprinkle on the cheese. Microwave on high for 45 seconds. Let sit 30 seconds.
      Add whatever toppings you want to your liking! (Classic: Salsa and peppers)

Broccoli and Cheese Soup

Prep Time: 1 minute
Cook Time: 10 minutes
Total Time: 11 minutes

Ingredients:

      1.    Campbells Broccoli and Cheddar Soup
      2.    Milk (as instructed on soup can..)
      3.    1/2 cup Shredded Cheddar Cheese
      4.    Rolls, Bagels, or Saltine Crackers

Directions:

       Follow all instructions on soup can EXCEPT don’t fill the can all the way up with milk (leave a gap of 2 cm from top) and add cheese as it’s heating up.
       Serve with the chosen bread product :)

Cheesy Scalloped Potatoes

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients:

     1.    Potatoes (cooking, red, whatever!)
     2.    3 Tbsp of stick butter
     3.    Salt
     4.    1 cup Shredded Cheddar cheese
     5.    Lowry’s seasoned salt (Optional)

Directions:

      Peel potatoes. Put large skillet on stove and heat to medium heat. Add the butter. Cut potatoes into thin slices on a cutting board or in a food processor.
      When butter’s melted, add potatoes to skillet. Cover for 5-10 minutes. CHECK and FLIP OCCASIONALLY. (I’ve burned these before, horrible smell.) Remove cover. Continue to flip until to crispiness desired is reached.
      Add the cheese and let it melt. Add salts as desired for taste (sprinkle those things). Remove from heat and serve!

Pasta (FAST!)

I know this is all simple, just some ways I found to cut corners :)

Prep Time: 8 minutes
Cook Time: 5 minutes
Total Time: 13 minutes

Ingredients:

  1.  Angel Hair Pasta (Other will work, Angel hair just has the shortest cook time)
  2.  Salt
  3.  Pasta Sauce (Ragu, whatever..)

Directions:

     Set up your 6 cups of water in a large pan and add a tsp or so of salt (speeds up time to boil). Set that burner to high. Get a smaller pan and add a cup of the pasta sauce. Set that one to low.
     When the water’s boiling, add as much pasta as you want and set the timer to 5 minutes (see box to make sure I’m right). Stir the pasta and sauce occasionally. If the sauce starts popping, turn off burner and remove from heat.
     Use a large slotted, pasta spoon to drain (keep the cleanup to a minimum). Add sauce to large pan and you’re done!

Hash Browns!

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients:

  1. 3 or so potatoes (depending on size and how much you want)
  2. 3 Tablespoons of stick butter
  3. Salt

Directions

Melt the butter in a 12 inch skillet, medium heat. Cut up the potatoes with a huge knife into hash brown shaped pieces (Thin and narrow, or whatever you want, hearts?). If you have or know how to use a food processor, do that instead of cutting them by hand. Put the potatoes into a strainer as they’re being cut and rinse periodically.
Once the potatoes are cut and the skillets hot, pop in the potatoes and cover for 10 minutes. Get a spatula and flip around and continue cooking until desired crispy-ness is met. Note: If many potatoes are used, more time will be needed. Maybe 20 minutes, but watch closely.
When finished cooking, remove from heat and add salt. I found Lawry’s seasoned salt to be a nice touch and/or ketchup.
